SANDWICHES
PATTY MELT
Per sandwich:
1 Whole Wheat Steak Bun
or 2 slices of any kind of Bread you like
1 Vegetable Protein Patty (plain)
about 1/2 med Onion
2-3 Button Mushrooms
Oleo
Garlic & Onion Powder
Pepper Flakes
(optional)
Cheese (Mozarella or Cheddar or American)
Cut Onion into rings (as much as you'd like), slice Mushrooms, sautee in Oleo or EVOO until soft and perhaps a bit brown around the edges. Meanwhile, grill Veg Patty. Spread Bread slices (or each half of a Bun) with Oleo, dust with Garlic and Onion Powder, shake on some Pepper Flakes (optional). Grill until crisp. Chop your grilled Veg Patty, arrange on 1 slice of the Bread or Bun, top with Cheese, heap on the Onions and Mushrooms, spritz on some Ketchup (if desired) and top with the second Bread/Bun slice. Yum!

NOTES:

1) A toaster oven is really ideal when fixing just one or two Sandwiches.
2) Veggie patties also make great
Bar-B-Q burgers -- brush with sauce of your choice and sprinkle with grated Onion (if desired) before grilling, then fix like any old Burger.
CHEESY TOMATO TOAST
Per person:
2 (not too thin) slices of your favourite Bread or a Whole Wheat Bun
Oleo
Cheese (Mozarella or Cheddar or American)
firm Tomatoes
Onion or Spring Onion
Black Pepper
Thinly coat Bread or each half of the Bun with Oleo, top with Cheese. Halve Tomato, de-seed, dice or cut thin slices, heap on top of the Cheese (as much as you want). Sprinkle with Black Pepper, then with finely chopped Onion or Spring Onion. Put under broiler (or in toaster oven) until bread is crisp around the edges.

NOTE: Put the bread on tinfoil before grilling to save clean-up time!

Great for breakfast, lunch or dinner.
My version of BEANS ON TOAST
1 can Vegetarian Beans
(Like Pork and Beans but without Piggy products)
1/2 med Onion
Rye or Pumpernickel or Whole Grain Bread
(lightly buttered)
Cheddar Cheese (optional)
Finely chop the Onion, mix with the Beans, nuke (covered) until the Onions had a chance to get tender (or simmer slowly on the stove but that methods calls for a lot of stirring). Toast bread. A slice of Cheese between the Toast and the Beans is especially nice.

FAVOURITE SNACK OR LIGHT LUNCH VARIATION: Serve the Beans as a side dish to a Grilled Cheese Sandwich.
CARROT DOGS (makes about 4 sandwiches)
3 large Carrots
1 cup Vegetable Broth

Scrape or peel the skin off the carrots. Depending on their size and shape, either leave as is or cut in half, then split the larger top part to create more even pieces (better for more even cooking and grilling). Boil them in the Vegetable Broth until fork-tender, abut 10 mins (it's probably better to err on the still-slightly-hard side). When done, remove from pot, pour the cooking broth into a mixing bowl and add

1 to 1-1/2 tbsp Rice Vinegar (unseasoned)
2 tbsp Soy Sauce (I used low sodium)
1 lg toe of Garlic (or 2 smaller ones), minced
2 tsp Liquid Smoke
1 generous tsp of Red Pepper Flakes
generous dash of Mrs. Dash (I used Onion and Herb)
about 1/2 tsp Black Pepper

Place carrots in Tupperware or other plastic bowl, preferably one that has a lid. Pour on the marinade, making sure each piece is well-coated (my bowl is oblong and just the right size so all pieces are pretty much submerged). Close tightly and put in fridge to use as needed. Might want to place a piece of cling wrap between the bowl and the lid so you can give it the occasional shake and it won't create a mess upon opening. This will keep for a few days in the fridge.

To serve, oil griddle or George Foreman grill or panini press and let it get hot. Grill carrots (as much as needed for one meal, put the rest back in the fridge) until they're heated through and show some nice grill marks. Of course they can also be fried in a pan in EVOO. Grill your bun(s), if desired, then add any topping you like. I like mine with shredded sharp cheddar, diced tomato, sauerkraut and a shmear of Grey Poupon. Yum!
